To make 16 meatballs (serves 4)
INGREDIENTS…
  • 500g beef mince
  • 1 onion finely chopped
  • 1 pepper finely chopped
  • spices to taste- garlic, salt, pepper, turmeric, curcumin, paprika.
SAUCE…
  • 500ml Tomato Frito- Check ingredients and calories as packaging and brands can differ a lot. Looking for tomato frito with no more than 6 ingredients.
TO MAKE…
  • Fry off pepper and onion, then leave to cool.
  • Mix together all ingredients and roll into balls.
  • Fry in a non-stick pan and a little olive oil. Turn the meatballs often until cooked through.
  • Add tomato frito and keep stirring until hot.
  • Serve and sprinkle with oregano.

Serves well with roasted vegetables, salad, rice, quinoa or pasta.
